Ingredients
- 1 1/2 cups banana, well-mashed (3 large ripe bananas)
1 teaspoon vanilla extract
1/4 cup coconut oil, melted
1/4 cup honey
1/4 cup peanut butter
3 cups rolled oats
2/3 cup almond flour
1/4 cup mild brewer’s yeast
1/2 teaspoon kosher salt
1 teaspoon cinnamon
1 teaspoon baking powder
1 cup roughly chopped chocolate or large chocolate chips
1/2 cup dried sour cherries
1/2 cup walnuts, chopped
Directions
- Preheat oven to 350°F.
- In a large bowl, combine the mashed bananas, vanilla extract, melted coconut oil, peanut butter, and honey, then set aside.
- In another bowl, mix together the oats, almond flour, brewer's yeast, salt, cinnamon, and baking powder.
- Add the dry ingredients to the wet ingredients and stir until combined. The dough should be thick and sticky at this point. Next, fold in the chocolate chips/chunks, dried sour cherries, and walnuts.
- Using a spoon, scoop dollops of the dough, each about 2 tablespoons in size, an inch apart onto a parchment-lined baking sheet.
- Bake for 15 to 20 minutes until the cookies are browned and the oats are toasty.
- Allow to cool and enjoy.
